Babi Ketjap (Pork in Soy Sauce)

 

Ingredients

1 lb

1 large

3 cloves

4 tbsp

1/2 cup

Pork Loin

Onion

Garlic

Thai Chile
Fresh ginger,

Ketjap manis
Water

Method
  1. Cook the meat in one piece in a covered pan in a moderate oven (350 F) until done
  2. Remove from the oven and cool
  3. When cool enough to handle, cut very fine (1/8" by 1/2")
  4. Grind together the onion, garlic, ginger and pepper in a food processor
  5. Fry in meat drippings until onion is golden (approximately 15 to 20 minutes)
  6. Add ketjap manis, water, and diced meat
  7. Simmer about 20 minutes
