Ayam Goreng Lengkuas (Galangal Fried Chicken)

 

Ingredients

1

1 stalk

4 tbsp

Whole chicken (cut up into 8 pieces)

Stalk lemongrass (bruised)

Salam (bay leaves)

Galangal (grated) (laos, lengkuas)

Vegetable oil (for deep frying)

Spice-Paste Ingredients:

3 cloves

5 small

1 tsp

2 tsp

Garlic

Shallots

Candlenuts

Tamarind (extract juice by mixing with 1 tbsp of warm water)

Fresh grated turmeric

Salt (adjust to taste)

Sugar (adjust to taste)

Method
  1. To prepare spice paste, pound or grind all ingredients together to form a paste

  2. Marinade the chicken pieces with the spice paste and set it aside for 15-20 minutes so that the chicken absorb the spice flavor

  3. In a wok, mix the chicken pieces with salam leaves and lemongrass

  4. Cook it with low heat and cover the wok until the chicken is half done (If needed, add a little water)

  5. Remove the chicken

  6. Heat lots of oil with medium high temperature for deep frying

  7. Deep fry the chicken pieces until the chicken become brownish

  8. Drain and remove

  9. Serve it with the fried grated galangal on top of it
