Vegetable Kurma

Ingredients

2 cups

1/2 inch

3 cloves

1/2 inch

Vegetables

Onions (cut length-wise)

Green chilies (cut length-wise)

Coriander powder

Turmeric powder (one pinch)

Cinnamon stick

Cloves

Cardamom

Coconut powder

Khus-Khus

Garlic

Ginger (fresh) 

Salt (adjust to taste)

Method
  1. Heat the oil in a reasonable sized vessel
  2. Add cinnamon, cloves and cardamom and fry for 2-3 minutes
  3. Add onions and green chilies and fry till onions turn brown
  4. Add garlic and  ginger pastes and fry for a minute or so
  5. Add vegetables and fry further for about 3 minutes
  6. Add water (about a cup or two)
  7. Let the vegetables and turmeric powder cook
  8. Add coconut paste, khus-khus, salt and wait until cooked in low heat

oil over medium heat
