Subz Bhaja (Vegetable
Fritters)
Ingredients |

3-4 pinches

Potatoes
Eggplant (brinjals)
Cauliflower (cut into small florets)
Ladies fingers
Green chillies (sliced diagonally and
deseeded)
Raw banana thinly peeled
Zucchini
Pumpkin (skinned and deseeded)
Gramflour
Rice flour
Hot oil
Poppy seeds
Turmeric powder
Chilli powder
Sodium bicarbonate
Oil to deep fry
Salt (adjust to taste) |
Method
-
Wash, wipe and slice vegetables (including skins)
(except cauliflower, ladies fingers and green chillies) into thick
diagonal slices
-
Make a batter of all the other ingredients, using water as
required (The batter should be able to coat the back
of a spoon smooth and thick)

Heat oil for frying
-
Dip some veggies in batter at a time,
coat with batter and let them in hot oil one by one
-
Fry fritters (veggies) till light golden and crisp then drain
-
Repeat for remaining vegetables
-
Serve an assortment each time and serve hot with chutney and sauce
Any
one or one or more vegetables in combination can also be used |
