Spiced Cauliflower and Tomato Curry


 

Ingredients

1 medium size

2 small

1/2 tsp

1/2 tsp

1/2 tsp

1 tsp

1/4 tsp

1 tbsp

Cauliflower (cut into little florets)

Tomatoes (diced )

Onion (diced)

Potato (diced)

Salt ( adjust to taste)

Garam masala powder

Chilli powder ( adjust to taste)

Cumin powder

Coconut (desiccated or fresh)

Lemon juice

Olive oil

Cilantro leaves (for grnishing)

Method
  1. In a blender, put the diced tomatoes, salt, garam masala powder, cumin powder, coconut powder and chilli powder and mix well to form a smooth paste
  2. Keep a heavy frying pan on the stove and add olive oil
  3. When the oil becomes hot, add diced onions, potatoes and cauliflower florets
  4. Fry the vegetables until they become tender and soft
  5. Add a little water if required, cover and cook for 10 minutes
  6. Once the vegetables are cooked, add the blended mixture and raise heat to high
  7. Mix the curry well and cook for 5 - 6 minutes
  8. Remove from heat and add lemon juice to give it a tang
  9. Garnish with cilantro leaves and serve hot
