Pork Vindaloo

 

Ingredients

1 kg

12 cloves

1 inch piece

1/2 peg

2 cups

Lean pork (cleaned and cut into 1/2 inch sized pieces)
Garlic
Ginger
Dried red chillies (peppers)
Peppercorns
Cloves
Cinnamon
Cumin seeds
Mustard seeds
Onions  (finely chopped)
Sugar
Vinegar
Oil
Coconut feni
Water
Salt (adjust to taste)

Method
  1. Rub salt on pork and keep aside
  2. Grind all the spices and blend it with vinegar, adding the 1/2 tsp sugar
  3. Apply the ground spices to the meat and marinate for 3 hours
  4. Heat the oil in the pan on medium heat and add the meat
  5. Fry the meat for few minutes, then add the chopped onion, coconut feni, rest of the vinegar and the water gradually
  6. Cover the pan and lower heat
  7. Stir cook till meat is tender and the oil rises to the top

    Note: Chicken or beef can also be used instead of pork
