Red pepper powder

Black  cardamom

Cinnamon sticks

Black pepper (ground)

Garlic (minced)

Ginger (minced)

Fennel seeds

Yoghurt (creamy or sour cream)

Lamb steaks (tender meat) (100 gm each)

Asafoetida (mixed with 1/4 cup hot water)

Kashmiri garam masala

Salt (adjust to taste)

Almonds (blanched and sliced for garnishing)

Ghee

1. Blend together the spices with yoghurt and  2 tbsp ghee and fry
2. Pound lamb steaks to flatten, and cook in the  above on medium heat, turning occasionally
3. When all liquid is absorbed and steaks are tender, sprinkle with asafoetida water
4. Brown meat well on all sides in ghee, then sprinkle with garam masala and almonds
