Indian Curry Chicken
 

Ingredients

3 tbsp

1 inch cube

Tomato sauce
Plain yogurt
Ginger

Garlic

Chicken (skinned and cut up)
Bay leaves

Oil

Cinnamon stick
Cardamom pods (green if you can find them)
Cloves

Pepper flakes (hot)

Turmeric
Salt (adjust to taste)

Pepper

Lemon juice

Water

Method
  1. Mix the tomato sauce, yogurt and 1 cup of water and set aside
  2. Blend the garlic, ginger and 2 tbsp of water until smooth
  3. Brown the chicken pieces in the oil
  4. Remove the chicken from skillet and lower heat
  5. Add the cinnamon stick, bay leaves, cardamom pods, cloves and hot pepper flakes
  6. Stir for 30 seconds
  7. Add the garlic and ginger paste and the turmeric
  8. Stir for 1 minute
  9. Add tomato mixture, salt, pepper and lemon juice and stir
  10. Add chicken, cover and simmer for 30 minutes, turning chicken a few times

Serve with plain rice
