Cauliflower Curry

 

Ingredients

1 whole

1 1/2 tsp

1/2 tsp

2 tsp

1 tsp

1 tsp

1 tsp

1 tbsp

2 medium

1/4 cup

3 tbsp

Cauliflower (cut into tiny flowerets)
Red chilli powder
Turmeric
Coriander (dhania)
Cumin
Aniseed (saunf) (roasted and powdered)
Garam masala
Almonds (soaked in water for 2 hrs)
Tomatoes
Coriander leaves (very finely chopped)
Cooking oil (ghee) (clarified butter)

Salt (adjust to taste)

Method
  1. Blend the tomatoes and almonds to get a smooth paste

  2. Heat the oil and fry the cauliflower till it is well browned

  3. Add all the spices and keep frying

  4. Add the chopped coriander and the tomato paste (Adjust water
    till you get the proper gravy consistency you need)

  5. Add salt and cook covered for about 10 minutes on a low fire

  6. When it comes to a boil, remove it off the fire

  7. Eat hot with chapatis or naan or paratha or idiappam or plain rice
