Bhindi Masala (Okra Masala)

 

Ingredients

1 lb

2 medium

3 medium

3/4 tsp

1 tsp

4 tbsp

1/2 tsp

1 tbsp

2 tbsp

1/4 cup

1 1/2 tsp

Okra

Onions (sliced)

Tomatoes (chopped)

Paprika

Amchoor powder

Margarine

Turmeric

Garam masala

Coriander leaves

Oil

Salt (adjust to taste)

Method
  1. Wash okra under running water and slice off the ends and cut each in half and set aside
  2. In a wok or heavy skillet heat the oil and sauté onions until translucent
  3. Add all spices except the garam masala and stir-fry 2 minutes
  4. Add tomatoes and cook the mixture over medium-high heat with constant stirring until all liquids are reduced and the mix looks like a paste (This should take 1 minute)
  5. Add the okra and stir-fry 2 minutes and cover and steam over medium heat until tender, for about 12-15 minutes
  6.  Spoon the okra onto a warm serving plate and sprinkle with the garam masala
  7. Garnish with coriander leaves
