Bhindi Masala (Okra Masala)
Ingredients |

1 lb
2 medium
3 medium
3/4 tsp
1 tsp
4 tbsp
1/2 tsp
1 tbsp
2 tbsp
1/4 cup
1 1/2 tsp |
Okra
Onions (sliced)
Tomatoes (chopped)
Paprika
Amchoor powder
Margarine
Turmeric
Garam masala
Coriander leaves
Oil
Salt (adjust to taste)

Method
- Wash okra under running water and slice off the ends
and cut each in
half and set aside
- In a wok or heavy skillet heat the oil and sauté onions until
translucent
- Add all spices except the garam masala and stir-fry 2 minutes
- Add
tomatoes and cook the mixture over medium-high heat with constant
stirring until all liquids are reduced and the mix looks like a paste (This should take 1 minute)
- Add the okra and stir-fry 2 minutes and
cover and steam over medium
heat until tender, for about 12-15 minutes
- Spoon the okra onto a warm serving plate and sprinkle with the
garam masala
- Garnish with coriander leaves
