Yee Main (Noodles and Gravy)

 

Ingredients

20 small

1/4 lb

1/2 lb

1 packet

1 qt

3 tbsp

Chinese mushrooms (or 1 can sliced mushrooms)

Chinese barbecued pork (cut into very thin slices)

Bok choy

Pre-fried noodles (1/2 lb)

Chicken stock

Oil

Bean sprouts

Green onions (slivered)

Salt

Sugar

Oyster sauce

Cornstarch

Water

Method
  1. Cook Chinese mushrooms by boiling in water for 10 minutes
  2. Rinse, squeeze dry, remove and discard stems and cut mushrooms into strips, julienne style
  3. Break branches off center stock of bok choy and remove and discard any flowers and peel outer covering off the center stock and cut diagonally into 2 inch lengths
  4. Bring chicken stock to a boil, add noodles, and cook for 5 minutes then drain and set aside (Discard the stock, as it will be quite oily)
  5. Heat wok, add 1 tbsp oil and stir-fry bok choy, bean sprouts, green onions, barbecued pork, and mushrooms for 3 minutes, adding salt and sugar then remove and set aside
  6. Heat wok, add 2 tbsp oil and noodles and stir-fry for 2 minutes, then, add the oyster sauce and mix well
  7. Add all other ingredients, except cornstarch and water, and toss together until well mixed
  8. Add thickening made by mixing the cornstarch with the cold water and cook for 1 minute, and serve
