Tomato Beef

 

Ingredients

Flank steak (cut into thin strips about 2 inches long)
Rice wine
Soy sauce
Ginger root (minced)
Pepper
Cornstarch
Chicken broth
Sesame oil
Sugar
Ketchup
Oil
Green onions (sliced)
Green pepper (seeded and cut into strips)
Ripe tomatoes (seeded and cut into wedges)

Pinch sugar

Method
  1. In a large bowl, combine wine, sugar, 2 tbsp soy sauce, ginger, pepper, cornstarch, and 2 tbsp oil then add meat strips and toss to coat and let marinate for 30 minutes

  2. In a small bowl, combine the broth, cornstarch, 1 tbsp soy sauce, sesame oil, sugar and ketchup and set aside

  3. Place wok over high heat and add 1/4 cup of oil and stir fry beef for 2 to 3 minutes

  4. Remove with a slotted spoon and transfer to a large bowl

  5. Add remaining 1/4 cup of oil and heat then add green onions and green pepper and stir fry for 1 minute

  6. Add tomatoes and stir-fry for another minute

  7. Add broth mixture and cook for 1 minute, or until it thickens slightly

  8. Add beef and mix well
