Sweet and Sour Prawns

Ingredients

1 clove

1 1/2 tbsp

Pinch

Fresh prawns (peeled)

Tomato ketchup

Sambal oelek (meshed hot chilies)

Sugar

Cornstarch

Garlic

Fresh ginger

Scallions

Rice wine

Egg white

Salt

Water

Oil

MSG (monosodium glutamate)

Method
  1. Marinate prawns for 20 minutes in egg white, 3 tbsp cornstarch, salt, water and oil
  2. Mix together the tomato ketchup, sambal oelek, MSG, sugar, rice wine and 1 tbsp cornstarch
  3. Peel garlic and ginger and chop finely
  4. Also chop scallions finely
  5. Heat 3/4 litres oil in a pan or wok and half  fry  the prawns
  6. Take them out of the pan after 45 seconds and drain them
  7. In another pan or wok put 5 tablespoons of oil and fry garlic and ginger for 30 seconds
  8. Add prawns and fry while stirring constantly
  9. Add prepared sauce and fry for 1 minute
  10. Add chopped scallions and 2 tablespoons oil

over medium heat
