Sweet & Sour Chicken Stir-fry

Ingredients

100 gm

1 whole

1 tsp

1/2 inch

Chicken (diced)

Yellow onion (divided into 6)

Garlic (crushed)

Lemongrass (very finely chopped)

Ginger (very finely julienned)

Fresh lemon rind

Cooking oil

Kaffir lime leaf

Baby corn (halved)

Red bell pepper (sliced)

Snow peas (halved)

Plum sauce

Lemon juice

Sambal oelek or dry red pepper  (freshly crushed)

Cornmeal (diluted with 50 ml water)

Salt (adjust to taste)

Method
  1. Heat cooking oil in wok
  2. Stir-fry onion, garlic, lemongrass, ginger, lemon rind, and lime leaves until fragrant
  3. Stir-fry chicken with the spices till almost thoroughly cooked
  4. Add bell pepper, snow peas, and baby corn one by one
  5. Stir-fry briefly just to seal the flavour
  6. Add plum sauce, lemon juice and sambal oelek and keep stiring
  7. As the condiments are evenly distributed, add the cornmeal solution and simmer briefly

Serve with fragrant rice
