Stir-Fried Shrimp and Vegetables

 

Ingredients

1/2 lb

2 slices

2 tbsp

1 tbsp

4 stalks

1 tbsp

2 tbsp

3 1/2 tbsp

1/2 tsp

1/2 cup

Shrimp (shell and devein)

Fresh ginger root (mince)

Sherry

Soy sauce

Green peppers (dice)

Onion (dice)

Celery (dice)

Cornstarch

Water

Oil

Salt

Stock

Method
  1. Combine ginger root with sherry and soy sauce

  2. Add to shrimp and toss and let stand 15 minutes, turning occasionally

  3. Blend cornstarch and cold water to a paste

  4. Heat 1 1/2 tbsp oil and add shrimp and stir-fry until pinkish (2 to 3 minutes) then remove from pan

  5. Heat remaining oil and add salt, then diced vegetables and stir-fry to soften slightly (1 to 2 minutes)

  6. Stir in stock and heat quickly

  7. Then cook, covered, 2 to 3 minutes over medium heat

  8. Return shrimp and stir in only to reheat and blend flavors (about 1 minute)

  9. Stir in cornstarch paste to thicken, and serve at once
