Stir-Fried Shrimp and Vegetables
Ingredients |

Shrimp (shell
and devein)
Fresh ginger root (mince)
Sherry
Soy sauce
Green peppers (dice)
Onion (dice)
Celery (dice)
Cornstarch
Water
Oil
Salt
Stock |
Method
-
Combine
ginger root with sherry
and
soy sauce
-
Add to shrimp and toss
and let stand 15 minutes, turning occasionally
-
Blend
cornstarch and cold water to a paste
-
Heat 1 1/2 tbsp oil and add shrimp and
stir-fry until pinkish (2 to 3 minutes) then remove from pan
-
Heat remaining oil and add salt,
then diced vegetables and stir-fry to soften slightly (1 to 2 minutes)

Stir in stock
and heat quickly
-
Then cook, covered, 2 to 3
minutes over medium heat
-
Return shrimp and stir in only to reheat and blend flavors (about
1 minute)

Stir in cornstarch paste to
thicken, and serve at once
