Sesame Chicken

 

Ingredients

3 whole

2 tbsp

3 1/2-4 cups

Boneless chicken breasts (cut into 1 inch cubes)

Sesame seeds (toasted)

Peanut oil for deep-frying

For Marinating

2 tbsp

1 tbsp

2 tbsp

2 tbsp

2 tbsp

1/4 tsp

1/4 tsp

1 tsp

A few drops

Light soy sauce
Cooking wine (or dry sherry)
Flour
Cornstarch
Water
Baking powder
Baking soda
Vegetable oil

Sesame oil

For Sauce

1/2 cup

1 cup

1/8-1/2 cup

1/4 cup

1 cup

2 tbsp

2 tbsp

1 tsp

1 clove

Water
Chicken broth
Vinegar (for a sweeter sauce use less vinegar)
Cornstarch
Sugar
Dark soy sauce 
Sesame oil 
Chili paste (adjust to taste)
Garlic (minced)

Method
  1. Mix the marinade ingredients and marinate the chicken for 20 minutes

  2. Mix together all of the sauce ingredients and pour them into a small pot and bring to a boil, stirring continuously

  3. Turn the heat down to low and keep warm while deep-frying the chicken

  4. Add the marinated chicken pieces a few at a time, and deep-fry until golden brown then drain on paper towels

  5. Repeat with the remainder of the chicken

  6. Just before finishing deep-frying, bring the sauce back up to a boil

  7. Place the chicken on a large platter and pour the sauce over

  8. Sprinkle with sesame seeds

  9. Serve the Sesame Chicken with rice
