Pei Quot (Roasted Spare Ribs)

 

Ingredients

2-2 1/2 lbs

Spare ribs

Black beans (wash and mash)

Ginger root (thin slices) (mince)

Scallion (mince)

Garlic (smash, peel, and mince)

Soy sauce

Honey

Hoisin sauce

Rice wine

Chicken broth

Oil

Method
  1. Remove as much fat and gristle as possible from the meat and cut apart into individual ribs
  2. Mix black beans, ginger root, garlic
  3. Mix soy sauce, honey, hoisin sauce, and rice wine
  4. Heat oil in a large deep skillet or wok, and add ginger root  mixture and the scallion
  5. Stir-fry for 1 minute and add the ribs and stir-fry for 5 minutes
  6. Add soy sauce mixture and stir-fry for 2 minutes
  7. Add the chicken broth
  8. Stir ribs to coat them with the sauce and bring to a boil and reduce heat to low
  9. Cover, and simmer for 30 minutes, stirring the ribs every 5 or 6 minutes to coat them with the sauce
  10. Remove the ribs from the skillet and spread in a large shallow roasting pan, in one layer if possible
  11. Roast in a 350 degrees F oven for 10 minutes
  12. If ribs are not dry in 10 minutes, roast a little longer

They may also be barbecued on an outdoor grill instead of roasting in the oven
