Hot and Spicy Chicken

 

Ingredients

Chicken (cut into bite-sized pieces)

Oil
Scallion (cut diagonally into 1 inch pieces)
Hot peppers (cut diagonally into 1 inch pieces)
Ginger (shredded)
Sherry
Light soy sauce
Fryer
Chicken broth
Light soy sauce
Wine vinegar
Sugar
Salt
Anise pepper
Cornstarch

Method
  1. Marinate chicken for 15-20 minutes in ginger, sherry, soy sauce mixture

  2. Grind anise pepper to powder and mix chicken broth, soy sauce, wine vinegar, sugar, salt and pepper

  3. Heat oil and add scallion, and stir fry several times

  4. Add ginger, sherry, soy mixture and chicken to scallions and hot pepper, and stir-fry for 1-2 minutes more

  5. Add chicken broth mixture, mix well

  6. Cook over low heat until chicken pieces are tender

  7. Add cornstarch to thicken and serve
