Ginger Beef

 

Ingredients

1 lb

1 stalk

Beef (rouladen)
Celery (cut into thin strips)
Carrot (cut into thin strips)
Hot chili peppers (cut into thin strips)
Fresh ginger (minced)
Garlic (minced)
Sesame oil

Oil (for deep-frying and 1 tbsp for stir-frying)

For marinating

2 tbsp

1 tsp

2 tbsp

Dark soy sauce
Cooking wine
Sugar
Ginger juice (peel and grate ginger and squeeze out juice)

For batter

1

1/4 cup

1/4 cup

1 tbsp

Egg white (lightly beaten)
Water
Flour
Cornstarch
Hot chili oil (optional)

For sauce

1 tbsp

2 tbsp

1 tbsp

4 tbsp

1/2 tsp

2 tbsp

Wine
Light soy sauce
Vinegar
Sugar (or brown sugar or honey)
Sesame oil
Water
Chili oil (or chili powder) (adjust to taste)

Method
  1. Cut beef into matchstick strips, cutting along the grain (The meat is easier to cut if it is partially frozen)
  2. Mix the four marinade ingredients and add to beef and marinate for 30 minutes
  3. Mix the sauce ingredients and set aside
  4. Beat the egg white and add water
  5. Add flour and cornstarch and mix the batter thoroughly
  6. Drop the batter into the marinated meat
  7. Heat wok and when heated, add 4 - 5 cups of oil
  8. When the oil is ready, add about 1/4 of the battered  meat mixture
  9. Deep-fry the beef until golden brown then remove and set aside
  10. When oil comes back to original temperature add more meat
  11. When meat is cooked, clean the wok
  12. Heat and add 1 tbsp oil and when oil is ready, add the vegetables and begin stir-frying
  13. Pour in the sauce and let come to a boil
  14. Add the deep-fried beef, toss quickly, and remove
  15. Sprinkle with sesame oil and serve hot
