Fried Rice

 

Ingredients

4 cups

2 large

1 tsp

1/2 tsp

4 tbsp

1/2 cup

1 tsp

1 cup

1 cup

1/2 cup

1 cup

Cooked rice (cold)
Eggs 
Salt
Pepper
Oil (canola or corn or peanut)
Scallions (thinly sliced) (or diced onion)
Thick soy sauce
Fresh peas (parboiled or thawed frozen peas)
Diced carrots (parboiled or thawed frozen carrots)
Diced cooked ham (or chicken or turkey or pork)
Fresh bean sprouts
Method
  1. Place the rice in a large bowl and break up any lumps and set aside
  2. Beat the eggs in a separate bowl with the salt and pepper and set aside
  3. Pour the oil into a wok or stir-fry pan and place the pan over medium-high heat
  4. When the oil is hot but not smoking, add the scallions (they should sizzle) and stir for about 15 seconds
  5. Stir the beaten eggs into the pan with a spatula and scramble until the eggs are dry and separate
  6. Add the rice to the eggs and mix thoroughly
  7. Pour the soy sauce evenly over the mixture
  8. Add the peas, carrots, ham and bean sprouts
  9. Stir constantly until all the ingredients are well mixed and heated through
  10. Serve the fried rice immediately
