Bird's Nest Soup

 

Ingredients

3 1/2 oz

6 1/4 cups

1 large

Dried bird's nest
Rich chicken stock for soup
Chicken breast
Cornstarch
Rich chicken stock for paste
Dry sherry
Egg whites
Salt

Green onions (minced)
Ham (minced)

Method
  1. Soak bird's nest in cold water overnight then drain and rinse
  2. Spread softened nest pieces on plate and pick out prominent pieces of "foreign" matter (e.g. feathers, twigs) with tweezers
  3. Debone chicken breast, remove membrane and muscle fiber, pound meat with cleaver handle to break down tissue, mince chicken until it is pulp
  4. Make medium thick paste with cornstarch and chicken stock
  5. Bring  6 cups of rich chicken stock for soup to boil
  6. Immediately add bird's nest and simmer 30 minutes
  7. Mix dry sherry and remaining 1/4 cup of rich chicken stock dribble slowly into minced chicken
  8. Lightly beat egg whites with a fork, fold gently into chicken so they are not completely blended
  9. Add salt to soup
  10. Bring soup back to boil and add chicken mixture slowly so soup does not cool
  11. When soup returns to boil, it is ready to serve (You can hold it at this point on low heat)
  12. Pour into serving bowl, garnish with green onions and ham
