Beef with Broccoli

 

Ingredients

3/4 lb

1 cup

2 1/2 tbsp

2 tbsp

3/4 tbsp

1 tbsp

2 cloves

1/2 cup

1 1/2 lb

Lean beef (sliced thinly into bite-sized pieces)
Cooking oil
Oyster sauce
Light soy sauce
Dark soy sauce
Sugar
Garlic (crushed)
Chicken broth
Cornstarch (if desired)

Carrots (sliced thinly) (optional)

Onion (sliced thinly) (optional)

Broccoli (remove flowerets, slice on the diagonal into thin slices)

A few drops of sesame oil

For marinating

Salt
Cooking wine
Cornstarch
Water

Oil

Method
  1. Except for the oil mix together marinade ingredients and add marinade to beef and marinate for thirty minutes

  2. Add 1 1/2 tbsp of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes

  3. Heat wok and add 1 cup of oil

  4. When oil is ready, add beef and stir-fry until it is nearly cooked then remove beef and set aside on a plate

  5. Drain the wok and wipe clean with a paper towel

  6. Add chicken broth to wok and bring the water to a boil and add the broccoli and carrots and onion (if desired)

  7. Cover and cook until broccoli is cooked through and drain the wok

  8. Heat wok and add about 2 tbsp oil

  9. Add the garlic and stir-fry for about 1 minute

  10. Add vegetables and beef and mix together

  11. Make a well in the middle of the wok and add the sauce ingredients

  12. Add cornstarch (if desired), stirring to thicken

  13. Mix sauce together with other ingredients and serve hot
