Asparagus and Beef

 

Ingredients

1/2 lb

1 tbsp

1 clove

1 1/2 lb

2 cup

1/4 cup

1 1/2 tsp

1/2 cup

1 tbsp

1/2 tsp

1 tbsp

Flank steak (thinly sliced)

Fermented black beans (Chinese)

Garlic

Asparagus (sliced diagonally into 1/2 inch pieces)

Boiling water

Oil

Salt

Chicken stock

Cornstarch

Sugar

Water

Method
  1. Soak black beans in warm water a few minutes
  2. Drain and mash beans with garlic
  3. Drop asparagus in boiling water and boil 2 minutes and drain immediately
  4. Heat 2 tablespoons oil in skillet or wok until very hot
  5. Add beef, stir quickly, then remove from pan
  6. Add remaining oil to skillet and heat
  7. Add bean mixture and stir over high heat for a few seconds
  8. Add salt and asparagus an stir-fry 1 minute
  9. Add chicken stock, cover and cook 2 minutes
  10. Mix cornstarch, sugar and water and stir into meat mixture
  11. Stir until sauce is thick and smooth
  12. Add beef and blend quickly
