Bean threads

Garlic (minced)

Ginger root (minced)

Soy sauce

Sesame oil

Peanut oil

Hot pepper sauce

Scallion (shredded)

Salt (adjust to taste)

1. Soak bean thread in 4 cups boiling water for 20 minutes
2. Marinate meat in 1/2 scallions, 2 tbsp soy sauce and sesame oil
3. Heat  peanut oil in wok and stir-fry the hot pepper sauce, ginger and garlic over high heat
4. Add meat and stir fry for 2 more minutes
5. Add 1/4 cup soy sauce and cook another 30 seconds
6. Add noodles and stir, chopping noodles in process
7. Add 2/3 cup water and rest of scallions and salt
