Trob Char Kreoung Sach Ko (Spicy Beef with Eggplant) Ingredients
1 lb 1 large 2 cups 1 1 2 cloves 2 tbsp 2 tbsp 1/2 cup 1 tbsp 1/2 tbsp 1/4 tsp 1/4 tsp 1/4 tsp 1/2 tsp	Beef (sliced thin) Eggplant (cut in half and sliced to bite size pieces) Collar green stalks (cut 2 inches length) Red bell pepper (seeded and sliced) Yellow onion (sliced) Garlic (minced) Cooking oil Lemon grass (minced) Coconut milk Fish sauce. Sugar. Salt. Turmeric powder. Black pepper. Cayenne pepper (or paprika)
Method Put beef in a small bowl and marinate with garlic, lemongrass, turmeric powder, salt, and black pepper and set aside Heat up a skillet or wok, and when it is hot pour cooking oil, add onion, and marinated beef and stir well Add eggplant and collar green stalks with the meat and stir Pour coconut milk over and season with sugar, cayenne pepper and salt Cover with lid and cook till the eggplant is tender Add bell pepper and stir for few more minutes Serve hot with rice and sweet fish sauce
