Sweet  and Sour Tofu Salad

 

Ingredients

Vegetable oil

Garlic (crushed)

Tofu (cubed)

Onion (sliced)

Carrot (cut into julienne strips)

Celery (sliced)

Red capsicums (sweet peppers) (deseeded and sliced)

Mangetout (halved)

French beans (halved)

Oyster sauce

Tamarind paste

Fish sauce

Soy sauce

Chilli sauce

Sugar

Lemon juice

Star anise (ground)

Cornflour

Water

Method
  1. Heat the oil in a large frying pan or wok until very hot, add the garlic and cook, stirring, for a few seconds
  2. Add the tofu in batches and stir-fry over a gentle heat, until golden on all sides the remove with a slotted spoon and keep warm
  3. Reheat the oil then add the onion, carrot, celery, red pepper, mangetout, broccoli and green beans and stir-fry for about 2-3 minutes or until tender-crisp
  4. Add the oyster sauce, tamarind concentrate, fish sauce,  soy sauce, chilli sauce, sugar, lemon juice and star anise and stir-fry for a further 2 minutes
  5. Mix the cornflour with the water and add to the pan  together with the fried tofu
  6. Bring to the boil and cook for a few minutes until the sauce thickens slightly
  7. Serve immediately
