Somlor Kor-Ko

Water
Fish (recommend trey, angnaing or cat fish) (cut up)
Chicken (cut up)
Butternut pumpkin (cubed)
Long string beans (cut 2 inches)
Japanese eggplant (cubed)
Sweet potato (or yam) (cubed)
Yellow onion (chopped)
Garlic (minced)
Lemon grass (minced)
Cooking oil
Roasted rice powder (Angkor leang)
Creamy style pickled fish (Pro-hok)
Fish sauce
Sugar.
Turmeric powder.
Kaffir lime leaves (minced)
Chili pepper (chopped) (optional)

Collar green leaves (chopped) (or 10 oz. package frozen chopped spinach)

Method

Heat oil in a large soup pot
Sauté onion, garlic, lemon grass, chili pepper, lime leaves, turmeric powder with chicken
Add fish sauce and sugar then pour in 6 cups of water and stir
Add pumpkin, sweet potato, and eggplant
When boil, add fish
Let it boil, then add string bean and collar green leaves (or spinach)
Stir in pickled fish (Pa-hok) and roasted rice powder
Simmer till the done and serve with plain rice
