Samlor Machoo Kreugn (Lemon Grass Soup) Ingredients
900 ml 2 stalks 4 cloves 2 tsp 50 gm 5 cm 2 4 2 tbsp 1/2 1 tsp 5	Water Fresh lemon grass (bruised) (or 4 tsp dried lemon grass) Garlic Fish sauce Rice Fresh galangal (or 1 tsp dried galangal) Chicken breasts (skinned and diced) Spring onions (chopped) Basil (freshly chopped) Lemon juice Coriander (freshly chopped) Kaffir lime leaves (or 2 tsp of grated lime peel) Chili paste (adjust to taste) Pepper
Method Place the water, Lemon Grass, garlic, fish sauce, rice, galangal and pepper in a large saucepan and bring to the boil Add the chicken, mixing well and cook for 10 minutes, skimming off any white froth which forms Place the spring onions, basil lemon juice, chili paste, coriander and lime leaves in a large serving bowl and mix well To serve, pour the soup over the onion mixture in the serving bowl, mix well and serve immediately
