Sach Chrouk Pakon Char Marik (Peppered Pork and Shrimp)

 

Ingredients

1/2 lb

2 tbsp

2 cloves

1 tbsp

1 tbsp

1/2 tsp

1/2 tsp

1/4 cup

1/2 lb

Pork lean meat or with skin on (sliced thin)

Cooking oil

Garlic (minced)

Sugar

Fish sauce

Salt

Black pepper

Water

Small or medium size shrimp (cleaned, cut it tails off but leave the shells on)

Caramelized Sauce:

1 tbsp

1 tbsp

Sugar

Water

Method
  1. To make the caramelized sauce: Put sugar and water in a pot that is big enough to hold all the ingredients. Cook in low heat and stir frequently till the sugar turns dark brown color, and not burnt. Pour water and set a side

  2. Pre-heat a wok or skillet, add cooking oil when it hot

  3. Add garlic and pork meat and stir meat frequently

  4. Add caramelized sauce and salt

  5. Simmer for 10 minutes or till meat is tender

  6. Increase cooking temperature to high, and add shrimp

  7. Stir till shrimp turns darker color pink

  8. Season with sugar, fish sauce, and black pepper

  9. Keep stirring till liquid reduced

  10. Serve hot with rice
