Noom Pachok (Breakfast Noodles)

 

Ingredients

Chicken
Water
White potato
Yellow onion
Lemon Grass (minced)
Green onion bottoms (chopped) 
Shrimp paste
Toasted rice powder
Rice root powder (if available)
Fish sauce
Curry powder (adjust to taste)
Chopped mint leaves (optional)
Noodles (suggested Angel Hair brand)
Bean sprouts (optional)

Cabbage (adjust to taste) (optional
Salt (adjust to taste)

Pepper (adjust to taste)

Cooking oil (soybean is traditional)

Curry powder:

3 tbsp

2 tsp

1 tsp

1 tsp

Coriander seeds
Cumin seeds
Yellow mustard seeds
Fennel seeds
Peppercorns
Cloves
Turmeric
Red pepper

Method
  1. Grind and mix all curry powder ingredients into powder

  2. Boil the chicken in 5 cups of water in a large pot until partially cooked and reserve stock

  3. Cook noodles according to instructions and set aside

  4. Dry and chop chicken, then add to a frying pan with oil, toasted rice powder and salt and fry until browned

  5. Return to the pot and add all other ingredients including the cooked noodles

  6. Bring to a boil for just a moment and simmer until the soup is thick
