Kari Bongkong Lasak  (Curried Shrimp and Cucumbers)

 

Ingredients

2 cloves

Garlic (crushed)
Green onions (chopped)
Ginger (peeled and chopped)
Ground fennel
Ground coriander
Turmeric
Cayenne powder
Peanut oil
Medium shrimp (shelled)
Coconut milk
Grated lemon peel
Lemon (juice)
Sugar
Fish sauce

Cucumber (quartered lengthwise, deseeded and cut into thick slices)

Method
  1. Place the garlic, green onions, and ginger into a food processor and blend to a puree
  2. Scrape the mixture from the blender and transfer to a mixing bowl
  3. Stir in the fennel, coriander, turmeric, and cayenne powder
  4. Heat the oil in a deep frying pan
  5. When hot, add the spice puree and fry for 3 minutes
  6. Add the shrimp and stir-fry for 5 minutes
  7. Stir in the coconut milk and bring to the boil
  8. Reduce the heat to low, add the cucumber and remaining ingredients, and simmer gently for 5 minutes, or until the cucumber is soft
  9. Serve at once with rice or noodles
