Curry Trey Ruah (Curried Snapper)

 

Ingredients

1/4 cup

Olive oil

Green chiles (soaked)

Cinnamon (broken)

Nutmeg

Star anise

Cardamom

Lemongrass

Cilantro (finely chopped)

Elephant garlic

Shallot (finely chopped)

Galangal

Ginger

Water

Shrimp paste

Turmeric

Peanut oil

Coconut milk

Tamarind paste

Sugar

Fish Sauce

Salt

Snapper fillets (chopped)

Eggplant (cubed)

Green Beans (julienned)

Bird's eye chiles (thinly sliced)

Method
  1. Combine  olive oil , green chiles, cinnamon, nutmeg, star anise, cardamom, lemongrass, cilantro, elephant garlic, shallot, galangal, ginger, water, shrimp paste and turmeric in a blender, and blend until mixture is smooth to form spice paste
  2. Heat oil in skillet and add spice paste and saute for about 2 minutes
  3. Add coconut milk and let simmer for 3 minutes
  4. Add tamarind paste, sugar, fish sauce and salt. and simmer for 4 more minutes
  5. Add fish, eggplant and green beans
  6. Cook until fish is tender for about  7 minutes

Serve over rice, garnished with chiles
