Curry Mouan (Chicken Curry)

 

Ingredients

Olive oil

Lemon grass

Green chiles (rehydrated and shred)

Garlic (finely chopped)

Shallot (finely chopped)

Galangal (chopped)

Cinnamon

Star anise

Cardamom

Nutmeg

Peppercorns

Coriander seed

Fennel seed

Cilantro (finely chopped)

Water

Turmeric

Shrimp paste

Olive oil

Coconut milk

Chicken (chopped)

Onion (thinly sliced)

Fish sauce

Sugar

Salt

Potato (peeled and sliced)

Method
  1. Heat oil in skillet, add  1/4 cup olive oil, lemon grass, green chiles, garlic, shallot, galangal, cinnamon, star anise, cardamom,  nutmeg,  peppercorns, coriander seed and fennel seed and fry for 5 minutes
  2. Transfer ingredients to a blender, add water, cilantro, turmeric and shrimp paste and blend until smooth and set aside the blended paste
  3. In heavy pot, heat oil, saute chicken, onion and potatoes until golden brown (This may have to be done in batches or in two separate pots)
  4. Add the blended paste and remaining ingredients and bring to a simmer for 20 minutes

Serve over rice
