Wat Ther Chout Hinn (Dry Pork Curry)
Ingredients |

Pork (cut
into 2 inch cubes)
Onion
Garlic
Fresh ginger (finely grated)
Powdered chile
Ground turmeric
Light sesame oil or corn oil
Lemon rind
Lemon juice
Fish sauce
Fresh coriander leaves (chopped) (for garnishing)
Spring onions (chopped) (for garnishing) |
Method
- Puree
onion, garlic, ginger, chile and turmeric
- Heat oil and put in the above puree and
fry well over low heat till fragrant
- When
well cooked, add pork and simmer gently in its own juices until tender
- Add finely chopped lemon rind, tamarind juice and fish sauce and stir
well
- Cook until all water has evaporated and the oil separated from the
gravy
- Garnish with slices of lemon, chopped fresh coriander leaves or
chopped spring onions
