Spicy
Pork Curry
Ingredients |

2 cups
15 cloves
4 tbsp
3 tbsp
1 tbsp
1 1/2 tsp
1 tsp
1.5 kg
1 tbsp
1 cup
2 tbsp |
Onion (chopped roughly)
Garlic (crushed)
Fresh ginger (finely chopped)
Peanut oil
Sesame oil
Chili powder
Turmeric
(grounded)
Boneless pork (cut into 3 cm cubes)
Vinegar
Water or stock
Fresh coriander leaves |
Method
- Place the onion, garlic and ginger in a
food processor and process until a thick rough paste is formed
- Heat the peanut oil and sesame oil in a
large pan
- Add the paste and cook it over medium
heat for about 15 minutes until it becomes golden brown color and has
oil around the edges
- Add the chili powder, turmeric and pork
and stir well for a few minutes until the pork is well coated with the
mixture
- Add the vinegar and water, cover and
simmer gently for 1 1/2 hours or until the meat is tender
- If necessary, reduce the liquid by
removing the lid and allowing the sauce to evaporate
- Season with salt to taste and scatter
over the coriander
boil over medium heat
Serve with rice |
