                                RECIPES OF BURMA

Spicy Fried Fish

 

Ingredients

2 1/2 lb

1/3 tsp

2 tbsp

2 medium

1 tsp

1/2 cup

2 tsp

3/4 tsp

Fish (ngamyin, butter, or catfish)
Turmeric
Fish sauce
Onions
Tamarind paste
Oil
Chili powder (coarse)
Shrimp paste

Method
  1. Clean and cut fish into 2-inch pieces and rub with turmeric and fish sauce
  2. Slice onion finely and evenly
  3. Soak tamarind in 1 cup water and strain out thick juice
  4. Heat oil and fry onions till golden and drain
  5. Fry fish, browning each side slightly and drain
  6. Drain oil and save, clean pan, and put back 1 tablespoon oil
  7. Fry chili powder crisp and drain, leaving a trace of chili in pan
  8. Put back 2 tablespoons oil, pour in tamarind juice, add shrimp paste and stir well
  9. Put in fish and marinade, cover and simmer
  10. Turn once, to avoid sticking, and cook till sauce is absorbed
  11. Pour in rest of oil and fry 3 to 5 minutes
  12. Pour sauce over fish on serving dish and arrange chili and fried onions on top
