                                RECIPES OF BURMA

Pyi-Gyi Nga Kazun Ywet (Squid & Dandelions)

Ingredients

1 tsp

1 tbsp

2 tsp

1 tsp

2 tsp

1 Clove

1 lb

1/4 lb

Dried red hot chili flakes

Fresh lemon juice

Soy sauce

Brown sugar

Corn (or Peanut) oil

Garlic (chopped fine)

Fresh squids, dressed, cut -into 1/2-inch round slices

Dandelion greens,  halved (green -leaves only)

(Watercress and Swiss chard are good substitutes for dandelion since they all have a slightly bitter but appealing taste)

Method
  1. Mix the chili flakes, lemon juice, soy sauce, and sugar together
  2. Let  the mixture stand for 15 minutes
  3. Heat the oil in a wok or skillet and over moderate heat fry the garlic for 1 minute
  4. Add the squid slices and stir fry for 2 minutes
  5. Add the mixture and continue to fry.
  6. Add the dandelion greens and cook for further 2 minutes
  7. Do not overcook since it toughens the squid
