Pyi-gyi-nga Asa Thut (Stuffed Squid)

 

Ingredients

1/2 kg

Medium-size squids

Vegetable oil

Ground turmeric

Sweet green pepper (diced 1/2-inch)

Shallot (diced)

Asparagus (1/2-inch pieces)

Fish sauce

Salt

Water

Soy sauce

Toothpicks

Method
  1. Dress each squid by pulling out the head, tentacles, and the insides
  2. Pull off the outer thin skin membrane
  3. Cut off the tentacles (to use in the stuffing) and cut them into 1/2-inch pieces with scissors
  4. Rinse out the white, tubular body
  5. Heat the oil in a skillet
  6. Add the turmeric, green pepper, shallot, asparagus, fish sauce, and salt, and stir-fry over moderate heat for 2 minutes
  7. Add the tentacles and stir-fry for 1 minute more
  8. Stuff each squid with some of this mixture
  9. Close the end with a toothpick
  10. Put the squids in a skillet and add the water and the soy sauce
  11. Cover and cook over moderate heat for 3 minutes, or until the liquid evaporates (Turn the squids over once during this time)
  12. Cut each squid into 3 pieces

Serve warm with any suitable sauce
