Prawn Curry

 

Ingredients

Shrimps (de-veined and butterflied)

Clarified butter

Shallot (minced)

Garlic (minced)

Ginger (minced)

Coconut cream

Turmeric powder

Madras curry powder

Mango pulp

Juice

2 inch bulb lemongrass (smashed)

Hot sweet chili powder (adjust to taste)

Cilantro leaves

Green onion (chopped)

Mango (cubed)

Honey

Vindaloo curry paste

Sea salt (adjust to taste)

Method
  1. Run the shrimp under cold water and dry on paper towel
  2. Set aside and cover
  3. Heat up enough clarified butter in a large saute pan to cover bottom
  4. Add shallots, garlic and ginger
  5. Coat thoroughly and saute for about one minute
  6. Add the coconut cream, turmeric, and curry powder then whisk in mango pulp, lime juice and lemongrass
  7. Bring to a simmer and after a few minutes, sieve into another saucepan
  8. Finish with the sweet chili powder to taste
  9. Take off the heat and finish with cilantro leaves and green onions
  10. In a separate pan, saute the shrimp, chopped mango and honey until cooked to medium rare
  11. Add curry paste and finish cooking
  12. Season to taste
