Kyettha Sikyan Yakyan (Spiced Game Hen Stew)

Ingredients

1/2 tsp

2 cloves

1/2 tsp

1 stalk

1 tbsp

1/2 tsp

1 cup

Corn (or peanut oil)

Ground turmeric

Onion (thinly sliced)

Fresh ginger (chopped)

Garlic (sliced)

Dried hot red chili flakes

Lemongrass (cut into 4 inch pieces and lightly pounded)

Cornish game hen (including giblets, cut into 8 pieces)

Fish sauce

Salt (adjust to taste)

Chicken broth

Method

Heat the oil in a pan and add the turmeric, onion, ginger, garlic, and chili flakes, and stir fry over moderate heat for 2 minutes
Add the lemongrass and fry for 1 minute more
Add the hen and fry for 4 minutes, stirring constantly
Add the fish sauce, salt, and broth
Bring to a boil, cover the pan, and cook over moderately low heat for 30 minutes (The sauce will reduce and thicken)
Serve warm with rice and salad
