Dan-bauk (Colored Rice with Spicy Chicken) 

Ingredients :

Whole chicken (cut into 8 pieces)

Ground turmeric

Corn or Peanut oil

Salt (adjust to tasye)

Cardamom pods

Paprika or chili powder

Garam masala

Cumin seed (grounded)

Cinnamon stick (3 inches long)

Rice (washed)

Homemade chicken broth

Crispy fried onions

Plain yogurt

Green peas

Dark raisins

Whole saffron, soaked in 2 tbsp. of warm water (for yellow color)

Method :
  1. Mix 2 tsp salt & 1/8 tsp turmeric together, rub into chicken, and let stand for 15 minutes
  2. Heat the oil in a skillet & brown the chicken on both sides over moderate heat for 5 minutes
  3. Remove chicken & set aside
  4. Heat the same oil in a large pan and add cardamom, 1/4 (=2/8) tsp turmeric, paprika, garam masala, cumin seed, cinnamon and 1 tsp salt
  5. Stir-fry for 1 minute, add rice, and stir-fry over moderate heat for 2 minutes more
  6. Add the chicken broth, bring to a boil, and cover the pan
  7. Reduce heat to low & simmer for 7 minutes to half-cook the rice
  8. Add the chicken, crispy onions, yogurt, green peas, raisins and saffron
  9.  Mix everything together, cover the pan, and cook slowly over low heat for 30 to 40 minutes. (Do not stir the mixture during this time but shake the pan back & forth several times so that sauce will not stick to pan)
  10. Dan bauk can also be baked in the oven rather than on top of the stove. When all the ingredients are mixed together, cover the pan and bake in a 325 F. oven for 30 to 40 minutes

Serve chicken and rice warm with light soup and with the Dan Bauk Salad & Indian mango pickle
