Chicken Curry with Potatoes

Ingredients :

1 1/2 kg

1/2 cup

4 cloves

2 tsp

2 cups

Whole chicken (cut into 8 pieces)

Vegetable oil

Garlic (pounded)

Onion (medium sized, finely sliced & deep-fried)

Paprika or chili powder

Salt (adjust to taste)

Sugar

Turmeric (grounded)

Bay leaves

Cinnamon

Cardamom pods

Garam masala

Cumin seed

Plain yogurt

Potatoes (medium size, pealed & cut into 1/2 inch cubes)

Tomato paste

Chicken broth

A few swigs of fresh mint leaves (Pusi-Nan)

Method :
  1. Heat the oil in a pan & fry the potatoes until golden brown
  2. Remove the potatoes & set aside
  3. Add garlic, cardamom, paprika, cumin seed, bay leaves and cinnamon into the pan & stir-fry for about 1 minute
  4. Add chicken & tomatoes paste and continue stir-fry over moderate heat for about 2 minutes.
  5. Add chicken broth, fried onions and let it simmer over low heat for about 15 minutes or more until the gravy becomes thick
  6. Add fried potato cubes & stir in garam masala and remove from heat 
  7. Top with mince leaves & cover with lid for about 10 minutes before serving

Serve with Butter & Beans Rice
