Chicken and Vegetable Fritters

Ingredients

1/4 cup

Chopped chicken

Medium egg (beaten)

Salt (adjust to taste)

Carrot (grated )

White Radish (grated )

Cabbage (grated)

Fish sauce

Sugar (optional)

Scallion (thinly sliced)

Cilantro (chopped )

Serrano Pepper (chopped)

Rice flour

Peanut oil

Method
  1. Mix  well the chicken, egg, salt, carrot, radish, cabbage, fish sauce, sugar, scallion, cilantro and serrano
  2. Add rice flour and mix well
  3. Heat the oil in a skillet
  4. Prepare fritters about 3 inches long and 1/2 inch thick using about 1/2 cup of mixture

  5. Cook in oil over moderate heat about 2 minutes until they turn brown on each side

  6. Drain on paper towels

                                               Serve with Achin or other Burmese dip
