Chicken and Rice Soup

Ingredients

1 cup

2 cups

5 cloves

1 onion

1 tbsp

1 tsp

1 tbsp

1 1/2 cups

3 qt

1 cup

Long grain rice

Chicken meat (boned and diced)

Garlic (crushed)

Onion (quartered)

Ginger (peeled and sliced)

Ground black pepper

Salt (adjust to taste)

Clear chicken stock

Water

Spring onion (thinly sliced)

Method

Wash and drain rice
In a large saucepan, combine all the ingredients except the spring onions and bring to the boil
Lower heat to medium low, cover and simmer for 1 1/2 hours, stirring occasionally
Serve garnished with spring onions
