A-me-hnat (Beef Curry)

Ingredients :

1/2 cup

1/8 tsp

1 kg

1 cup

2 tbsp

2 tsp

1 tsp

2 tsp

1 tsp

4 cloves

1 cup

1 tsp

1 tsp

Groundnut oil

Turmeric (grounded)

Round steak or boneless chuck (cut into 2-inch cubes)

Onions (thinly sliced)

Plain yogurt

Fish sauce

Cumin seeds (grounded)

Paprika or chili powder

Fresh ginger (finely chopped)

Garlic (finely chopped)

Meat broth or water

Sugar

Salt (adjust to taste)

Method :
  1. Heat the oil in a pan and add turmeric
  2. Add onions and fry them crisp over moderate heat; do not burn. Remove onions and set aside
  3. Remove all the oil except 2 tbsp
  4. Marinate beef for 1 to 2 hours in yogurt, fish sauce, salt, sugar, cumin seeds, paprika, and reserved fried onions, all mixed well together
  5. Heat reserved 2-tbsp oil in the same pan and brown ginger and garlic over moderate heat for 2 minutes
  6. Add marinated beef mixture and brown well for 15 to 20 minutes
  7. Stir frequently
  8. Add water, cover the pan, and cook over low heat for about 1 & 1/2 hours, until beef is tender. (The sauce will have reduced to a thick consistency)

Serve warm with rice
