Why is copper cookware favored to stainless steel?

Next to silver, copper is the most conductive material. When you need cookware that will heat up and cool down quickly, copper is the choice as it will give the best control. Copper will react with certain food. Hence it must be lined with an inert metal such as stainless steel or tin.

Difference between 18/8 and 18/10 stainless steel.

The percentage of chromium in steel which helps protect against corrosion is referred by the number "18". The numbers "8" or "10" refer to he percentage of nickel which provides additional corrosion resistance and gives the metal its shiny appearance. More nickel is indicated by the higher number. "18/8" and "18/10" stainless steel are both suitable for culinary purposes.

Any advantage of "surgical stainless" cookware?

For an item to be labeled "surgical stainless" it must contain more than 5% carbon. Every stainless steel is manufactured with at least 15% carbon, thus making "surgical stainless" a meaningless statement. Do not be misled when a cookware item is labeled "surgical stainless" by thinking it is somehow more sanitary or better for it.

How to save burnt food in the bottom of new pots.

An easy method for removing burnt foods from stainless steel is to make a fairly thick paste out of powdered cleanser and water. Smear it on the damaged pot very thick and let it set overnight. The burned food should peel right off in the morning.
